They cook them there and then and then crack the shell making it easy to get the tail meat out; extracting the claw meat still a bit of a pain if you don’t know what you’re doing.

Not true I have met many lobsters over the years and they come from a variety of social classes.

 

Sorry that should read ‘ate many lobsters over the years’.
