Sticky and gelatinous... Dunno if it's a generic term or a specific cut but my butcher does beef stewing hough and it is magnificent for this type of thing too. I started the Ragu yesterday at dinner time and cooked it for 4 or so hours and then left it in the oven with lid off while it cooled then put it on the hob tonight to warm thorough really low for a couple of hours, the bone just slipped out the meat. Our local supermarket for some reason had a few bags of them and I decided to sell a kidney and buy a packet. They were shite. Nah In water first then pan fried in some garlic butter to get a little crisp on them. I think I could have done with a little bit more flour to firm them up more perhaps allowed the potato to cool completely before shaping, they were delicious though and a good alternative to mash or pasta ( polenta was knocked back at first suggestion) 15 minutes ago, Venti said: al forno is 'oven cooked' Living in Italy I'm pretty sure he knows that.
