I'm gonna make some wings of fury tonight, the sauce is:

Bag of scotch bonnets (I've got about 10-12)

A little cider vinegar

Some lime juice

A clove of garlic

A few cherry tomatoes

Salt & Pepper

This all gets blended, then cooked off a little with lots of butter. Anyone else make ridiculously hot sauce? Any tips?

That sounds more like a marinade than a sauce.

I would add a small white onion, a little veggie boullion & water. Maybe some sugar to balance.

Slow cooked a leg of lamb yesterday, decided to use some of it for a curry.

Spice mix

1 x tsp each of mustard seed, coriander seed, cloves

about 6 cardamom pods

3 tsp x cumin seeds

1/3 stick cinnamon

1/3 nutmeg

1 Bay leaf

Some black pepper

Lightly toasted this in a pan and ground it up.

Chop a large onion and fry in plenty of oil for about 10 mins until soft, add the ground spice mix, plus 1/2 tsp turmeric, 1/2 tsp salt, as much chilli powder as you like (I used about 2 tsp) Add lots of chopped garlic and ginger (I tend to use a blender to chop em them together with a little oil) and some green chillis if you have them. Fry this for a little longer, then add 3 chopped tomoatoes. Add in some water and simmer and your curry sauce is basically done. I also added in a red pepper and some boiled baby potatoes. Some yoghurt and fresh coriander would also work nice, but I didn't have them.Finally I chucked in some of the slow cooked lamb to heat up and take on the sauce, delicious.

(If you slow cook the lamb seperately like I did, try and get as much of the lamb juices in the curry as possible)

Gonna make some shepherds pie tonight with the rest of the lamb.
