Tom (aka Simon Murray) seems to be a perfectionist and that’ll hold him in good stead, I think. After a couple of slightly ropey heats, the standard now is very high. I'd wage that 98% time is spent feeding kids of wealthy families and the very occasional dinner party meaning you don't end up with the range of skills chefs who've worked kitchens have. Easy to have a few good dinner parties up your sleeve, with recipie books and time prepare. They're often found out on blind rounds.
