I just felt they were rattled in at a bit of a pace and not being a particular wine buff, it wasn't needed. I'm so bunged up I could hardly taste anything, but given that the usually spice-tolerant current future Mrs Connolly has just tapped out after 3 mouthfuls (steady Kenneth), tomorrow morning, I should be on the road to recovery. Marinated the egg in soy and mirin for the first time and it was a huge success, will marinate them for longer next time to intensify the flavour.
