Your 1 star wanted level changes to a 2 star for no reason and it takes f*cking ages to lose them even if they don't know where you are. Hide in an alley or behind a building that has a wall at the back. I once hid in an open area that had high walls, could see the police cars passing me about 50 feet away but still got off. I was just about to plough Michael's son's car through Simeon's car dealership window to complete that mission when a stunt plane popped out of nowhere and all the bystanders stood looking amazed and asking where it came from. Stopped doing missions when I got to the point where I could go all three characters and just pissed about trying to build all their stats up.
