Proper osteria home cooking, in that diavola isn't normally a pasta dish. They've sliced some spicy salami and olives through it. You're right about the sauce thing. The American response to any “ethnic” or “traditional” dish is to adjust it to “American tastes”. Chinese dishes are “improved” by adding more meat and sauces, plus doubling the serving size. Italian dishes get, as you’ve noted, drowned in sauces, because if a little is good…meanwhile, the flavor of the sauces is turned down so the larger amount doesn’t overwhelm you. Very much looking forward to having these later. Fairly sure County fans spoke highly of them.
