Had a cote de boeuf off the specials board and it was fucking class. Mussels to start were also very good IIRC. Bairnardo Posted October 27, 2019 Share Posted October 27, 2019 Have forgive some slight rough edges, had a bit of a chew working the dough as it was previously frozen and was a bit too elastic to shape well. Regardless of looks though, this parma ham, salami, mushroom and mascarpone effort was probably the best tasting effort so far. I did the second rise on greaseproof paper which I then lowered into my cast iron pot. What you cant see in the photo is the paper absolutely welded to the bottom crust. Do you use paper or just go straight in? Either not enough activity due to mistiming feed/use, or not risen long enough.
