I'm no organised crime expert but it seems the ones least likely to get themselves killed, going by the limited few books I've read etc, are the ones who are pretty much seeking to build a legit empire to fall back on asap, and not making an absolute show of themselves. They are the only ones to make decent coin, as they can manipulate the goons because they tend to be quite thick. They usually do run legitimate businesses and never gloat about what they make.
