May I suggest turkey mince? Never tried it in lasagne but I've been using it in burritos and it's magic as well as a healthier option. 

I reserve the right to say I didn't force you to do it if it's stinking in a lasagne.

Fat is flavour!

I've had lasagna with chicken mince before. It was nice but prefer richer, darker meat like beef which I think blends with the tomato and pesto sauce better.
